Saddle stitch is two-needle stitching where each stitch locks independently, which means if one stitch breaks the whole seam doesn't come apart. Machine stitch is a lock stitch that can unravel if it starts to go. For leather goods that get real use, I'll say saddle stitch is the right call and getting it consistent takes practice but the key things are to keep your thread tension even, use the same angle on your needles every time and don't rush. The groover and pricking irons do most of the work if you prep your stitch line correctly. Waxed linen thread is more forgiving than synthetic for learning.
 
Consistent spacing and tension seem to be what separate a beginner saddle stitch from one that looks professionally done. The prep work really does make the stitching easier.
